Fascinating Food: POMEGRANATES
POMEGRANATES: Fruit of Paradise

*
Some researchers now suggest that the infamous fruit passed between Adam and Eve may have, in fact, been a pomegranate. Well, I for one would find myself much more sympathetic towards the temptation of these Biblical folk if that were the case. &

This fascinating fruit has enjoyed an explosion in popularity since becoming more readily available in our country due to both its versatility and amazing health benefits. Around the world, however, pomegranates have long held a prominent role in both the cuisine and literature of ancient cultures. So whether you're contemplating the red of a lover's lips or simply seeking a colorful and tasty addition to the dinner table, pomegranates may be worth getting to know.

The pomegranate has origins in the Middle East, Egypt, India, and China and was then imported to Greece and Italy. References to both the tree and fruit appear throughout Greek and Roman mythology, the Old Testament of the Bible, and even Shakespeare. It has been called both the fruit of the underworld and the fruit of paradise, and traditionally represented fertility. Scientists now agree that the pomegranate possesses, if not magical properties, at least some remarkable nutritional benefits. &

High in antioxidants and relatively low in sugar, pomegranates are a rich source of fiber, potassium, niacin, and Vitamin C, all of which contribute to its restorative power. You can find fresh pomegranates in the fall and winter. Choose a large fruit with thick, shiny skin and cut it in half to separate its jewel toned seeds from the membrane. These can be used for juice or used in recipes. I've heard several suggestions on the proper way to handle seeding and juicing the pomegranate, but my only advice would be -don't wear white!
